Mary Berry paneer curry with roast vegetables (cauliflower and sweet potatoes) recipe on Mary Berry’s Simple Comforts

Mary Berry served up a tasty paneer cheese curry with roast vegetables (cauliflower and sweet potatoes) spinach and mango chutney on Mary Berry’s Simple Comforts.

The ingredients are: 4 tbsp sunflower oil, 1 cauliflower, cut into florets, 300g sweet potato, peeled and cut into 2cm chunks, 225g paneer, cut into 1cm dice, 2 onions, sliced, 3cm piece fresh root ginger, peeled and grated, 1 tbsp curry powder, 1 tbsp garam masala, ¼ tsp ground cloves, 2 tbsp plain flour, 600ml hot vegetable stock, 2 tbsp mango chutney, 150ml double cream, 115g baby spinach, 1 lemon, juice only, salt and freshly ground black pepper.

To serve: warm naan and mango chutney.
