Simon Rimmer Chicken Tray Bake with Miso Butter, Onions and Potatoes recipe on Sunday Brunch

Simon Rimmer served up a tasty Chicken Tray Bake with Miso Butter, Onions and Potatoes on Sunday Brunch.

The ingredients are: 12 skin on deboned chicken thighs, pancetta, 3 onions, 75g butter, 1 heaped tbsp white miso paste, 200g edamame beans, 6 tomatoes and 450g baby potatoes.

To Serve: sour cream, lemon wedges, parsley and crusty bread.
