Simon Rimmer chocolate meringue pudding recipe on Sunday Brunch

Simon Rimmer served up a delicious chocolate marble meringue pudding with fruit and custard on Sunday Brunch.

The ingredients are: 110g chocolate, 90g of butter, 100g sugar, half a tsp of salt, a tsp of vanilla paste, 2 large eggs and 30g of sifted cocoa powder.

For the meringue: 3 egg whites, 130g sugar, pinch of salt, a tsp of vanilla paste and 70g of melted cooled chocolate.
