John Torode immune-boosting soup with watercress recipe on This Morning

John Torode served up a tasty spring immune-boosting soup with watercress, parsley, coriander and homemade bread on This Morning.

The ingredients are: 200g watercress, Small bunch parsley, stems finely chopped, 50g butter, 1 large onion, diced, 1 clove garlic, crushed, 2 sticks celery, diced, quarter of a leek, diced, 200g potato, very small dice, 1.2 litre vegetable stock, 4 spears asparagus, sliced 2.5cm long on an angle, 50g peas, 50g broad beans, 50g soybeans (these can be bought frozen), 1 whole spring onion, sliced on the bias, Olive oil, 50g spinach leaves, small handful of coriander, 20ml cream, 5 mint leaves, shredded, Truffle oil, to serve, optional, Salt and freshly ground black pepper.
