Simon Rimmer served up a delicious Oh-Rio Chocolate Pie on Sunday Brunch.
The ingredients for the base: 275g crushed oreos, 65ml melted butter and Pinch salt.
For the filling: 100g sugar, 3tbs cornflour, 2tbs cocoa powder, 725ml whole milk, 6 yolks, 225g dark chocolate roughly chopped, 30g cubed butter and tsp vanilla.
For the topping: 250ml whipped cream, 15g icing sugar and Tsp vanilla.
Garnish with crushed oreos.
