Fearne Cotton Vegan Black Bean Sausages with Mixed Root Mash recipe on Sunday Brunch

Fearne Cotton served up tasty vegan black bean sausages with smoked tofu, mixed root mash on Sunday Brunch.

The ingredients are: 2 tbsp olive oil, plus extra for frying, 1 onion, finely chopped, 3 garlic cloves, crushed, 1 tsp thyme leaves, 1 tsp finely chopped fresh rosemary leaves, 1 x 400g tin black beans, rinsed and drained, 6 sundried tomatoes in oil, drained, 1 carrot, finely grated, 200g smoked tofu, drained and grated, 3 tbsp rice flour, sifted, sea salt and freshly ground black pepper

Mixed root mash to serve.
