Phil Vickery served up a delicious autumn apple strudel with marmalade, lemon zest, and a salted caramel butterscotch sauce on This Morning.
The ingredients for the pastry: 375g plain flour, not strong flour, 2 tbsp any oil, 1 medium egg, beaten, 2 pinches salt, 200 mls cold water, roughly Or if you prefer you can use 6 sheets of filo pastry.
For the filling: 6-8 eating apples (not granny smith), peeled and cut into small wedges, Roughly 6-8 tbsp fresh brioche or breadcrumbs, 2-3 tbsp of marmalade, Zest of 2 lemons, 120g light brown sugar, 2 tsp ground cinnamon and 50g melted butter or oil.
Salted caramel sauce: 120g unsalted butter, 150g castor sugar, 275mls double cream, 1 tbsp black treacle, Salt to taste, Dash lemon juice and 2 tbsp vanilla extract.
