Simon Rimmer Soft Shell Crab with Pickled Watermelon and Cucumber recipe on Sunday Brunch

Simon Rimmer served up a tasty soft shell crab with pickled watermelon and cucumber on Sunday Brunch.

The ingredients are: 12 x soft shell crab, defrosted and patted dry, Flour mix – 200g flour, 1 tbs each of smoked paprika, cayenne, garlic powder, celery salt, 1 tsp turmeric, Oil to deep fry, 400g watermelon, cut into triangles about 75mm each side, 400g cucumber, cut into half moons, seeds removed, Lots of chopped mint, Pickle – 200ml cider vinegar, 200ml water, 200g sugar, 1 tbs chilli flakes, Tbs salt and 12 coriander seeds.
