Simon Rimmer Tiropita with tomatoes and feta cheese recipe on Sunday Brunch

Simon Rimmer served up a tasty tiropita with tomatoes and feta cheese on Sunday Brunch.

The ingredients are: 10 sheets filo pastry, 175ml melted butter and 15g sesame seeds.

For the filling: 200g feta, 175ml double cream, 100g finely grated parmesan, 100g drained cottage cheese, 100g gouda, 2 eggs, beaten, 15g finely chopped mint and cracked black pepper.

To serve: tomatoes chopped with mint, olive oil and red wine vinegar.
