Gino’s seasonal twist on a classic risotto recipe with chestnuts and Italian sausage on This Morning

Gino served up a tasty one pot risotto with chestnuts, Italian sausage, brandy and white truffle on This Morning.

The ingredients are: 3 tbsp olive oil, 3 coarse, Italian-style sausages (about 200g) skins removed, 1 onion, peeled and finely chopped, 1 celery stick, finely chopped, 2 tbsp chopped fresh thyme, plus extra sprigs to garnish, 300g Arborio or Carnaroli rice, 6 tbsp brandy, 1.2 litres hot vegetable stock, 100g cooked, peeled chestnuts (vacuum packed), finely chopped, 100g unsalted butter, cut into cubes, 130g freshly grated Parmesan cheese and Freshly ground black pepper.
