Kim and Chris Mexican tortilla baskets recipe on Eat Well for Less?

Kim Venter served up tasty Mexican tortilla baskets using a recipe by Chris Bavin on Eat Well for Less?

The ingredients for the stew are: 325g split red lentils, 1 tsp rapeseed oil, 2 onions, roughly chopped, 4 garlic cloves, finely chopped, 2 red chilli, deseeded and finely chopped, 1 tbsp ground cumin, 1 tbsp ground coriander, 2 tsp smoked paprika, 2 tsp ground black pepper, 2 tbsp tomato puree, 1kg tomato passata, 2 vegetable stock cubes, 3 large courgettes, grated, 400g tin black beans or three bean salad in water, drained, 4 soft wholemeal tortillas and sunflower oil spray.

For the toppings: 2 avocados, peeled, stoned and roughly chopped, 1 lime, juice only, 1 small bunch coriander, roughly chopped, 60g cheddar cheese, grated, cos or Little Gem lettuce and 3 tomatoes, roughly chopped.
