Today Jamie prepared a roast chicken with a twist on Jamie and Jimmy’s Friday Night Feast. He roast his chicken with a third of a can of beer with the chicken sitting on the can.
Jamie says “I first roasted chicken like this when I visited the US – the steam from the beer creates the most amazingly juicy results.”
Jamie rubs his beer butt chicken with the following ingredients after grinding them to a fine powder in a large pestle and mortar: a tablespoon smoked paprika, a teaspoon cayenne pepper, a tablespoon fennel seeds, a tablespoon coriander seeds, a teaspoon cumin seeds, 2 dried red chillies, a teaspoon sea salt, heaped tablespoon freshly ground black pepper and tablespoon soft dark brown sugar.
