Stuffed aubergines with Cialledda salad recipe on The Hairy Bikers’ Mediterranean Adventure

Simon and Dave served up tasty stuffed Italian aubergines with a Cialledda salad on The Hairy Bikers’ Mediterranean Adventure.

The ingredients for the stuffed aubergines are: 4 large aubergines, 6 tbsp olive oil, 1 large onion, finely chopped, 3 garlic cloves, finely chopped, 1 tsp dried thyme, 1 tsp dried oregano, pinch dried red chilli flakes (optional), 4 tomatoes, skinned and roughly chopped, 50g white breadcrumbs (ciabatta is good), 25g Parmesan or Pecorino, or alternative vegetarian hard cheese, freshly grated, ½ unwaxed lemon, finely grated zest only, handful fresh basil leaves, shredded, salt and freshly ground black pepper.

For the Cialledda salad: 1 stale ciabatta, or decent sourdough type bread (around 250g), 1 small red onion, very finely sliced, 500g very ripe tomatoes, 1 garlic clove, crushed, ½ tsp dried oregano, 2 tbsp olive oil, handful black olives, small bunch basil, leaves only, salt and freshly ground black pepper.
