The Bikers Turkey stuffing and ham pie recipe

Si and Dave served up a creamy turkey pie made with leeks, tarragon and homemade pastry for Gloria Hunniford on The Hairy Bikers Home for Christmas.

The ingredients for the pastry: 350g plain flour, 125g butter, chilled and diced, 75g lard, chilled and diced, pinch salt, iced water and 1 free-range egg, beaten.

For the filling: 15g butter, 3 leeks, thickly sliced, salt and freshly ground black pepper, 100ml white wine, 500g cooked turkey meat, diced, 200g cooked ham, diced and 200g stuffing, broken up.

For the sauce: 50g butter, 50g plain flour, 400ml turkey or chicken stock, 200ml full-fat milk, 100ml single cream and few tarragon leaves, finely chopped.
