Gino’s barbecued pork ribs, pork chops and beans recipe

Gino D’Acampo served up Tuscan-style barbecued pork chops, pork ribs and spicy borlotti beans on Gino’s Italian Coastal Escape.

The ingredients are: 4 pork ribs, 4 pork loin steaks, 6 pork sausages, 4 pork chops, 2 fennel bulbs, cored and cut into 3 thick pieces, 6 cobs sweetcorn, 2 large red peppers, deseeded and quartered and 4 Romano (long, thin) peppers (left whole).

For the marinade: 4 tablespoons olive oil, 4 tablespoons balsamic vinegar, 50ml red wine, 2 tablespoons runny honey, 3 tablespoons whisky, 3 teaspoons chilli powder, 2 teaspoons paprika and 2 teaspoons fine sea salt.

For the beans: 2 tablespoons olive oil, 2 medium red onions, finely sliced, 3 x 400g tins of borlotti beans, rinsed and drained, 3 teaspoons chilli powder, 3 teaspoons paprika, 100ml red wine and Small handful of fresh oregano, shredded.
