Simon Rimmer courgette fritters recipe on Eat the Week with Iceland

Simon Rimmer served up courgette fritters with salas on Eat the Week with Iceland.

The ingredients are: 100g plain flour, 5g baking powder, Salt and pepper, Pinch of smoked paprika, 15g caster sugar, 2 eggs, 75ml milk, 200g sweet corn, 2 courgettes – grated, 6 spring onions – finely chopped, 75g feta cheese – crumbled, 20g mint – chopped and Oil to fry.
