Simon Rimmer served up Moroccan baked rice with chicken on Eat the Week with Iceland.
The ingredients are: 350g risotto rice (short grain rice), 500g chicken breast, cut into chunks, 1 onion – sliced, 2 carrots – sliced, 4 tomatoes – roughly chopped, 1 tbsp. flat leaf parsley – chopped, 1 tin of mixed beans – drained and washed, 1.5 litres chicken stock, 100g butter, salt and pepper.
for the spice mix: 2 tsp each of ground cumin, Ground cinnamon, Ground coriander, Paprika, Soft dark brown sugar, Garlic powder, Onion powder, Salt and White pepper and turmeric.
