Simon Rimmer sour beef stew recipe on Eat the Week with Iceland

Simon Rimmer served up sour beef stew recipe on Eat the Week with Iceland.

The ingredients are: 750g rump steak or chuck steak – cut into large pieces, 100g bacon lardons, 40ml oil, 2 sprigs rosemary, 1 apple – peeled and sliced and 200g new potatoes.

For the Marinade: 750ml water, 15g salt, 250ml white wine vinegar, 2 onions – diced, 2 carrots – diced, 3 all spice berries, 4 black peppercorns, 2 cloves, 2 bay leaves, 5 juniper berries and 2 sprigs rosemary.

For the sauerkraut: 1 cabbage, 1 onion, Olive oil, 200ml white wine vinegar, 50g honey, 100g demerara sugar, 1 bay leaf, 2-3 tbsp. frozen chopped parsley and Salt and pepper.
