Dean’s lemon and thyme chicken recipe on Lorraine

Dean Edwards served up lemon and thyme spatchcock chicken with pesto on today’s episode of Lorraine.

The ingredients are: 1 whole chicken, 2 tbsp olive oil, Few sprigs fresh thyme, Juice and zest half a lemon, 300g new potatoes, par boiled, 2 tbsp clear honey and 200g cherry tomatoes on the vine.

For the pesto: Large handful fresh basil, 50g pine nuts, toasted, ½ clove garlic, 50ml extra virgin olive oil, 30g Parmesan cheese and Lemon juice to taste.
