John Whaite Spring chicken recipe on Lorraine

John Whaite served up Spring chicken with crushed new potatoes on today’s episode of Lorraine.

The ingredients are: 500g new potatoes, skin on, 8 skinless chicken thighs (bone in), 4 garlic cloves, unpeeled, 2 tbsp extra virgin olive oil, Juice of ½ lemon, 200g thick asparagus, 3 spring onions, halved, 50g green pitted olives, sea salt flakes and black pepper.

Tomato salsa: 75ml extra virgin olive oil, Juice of ½ lemon, Small handful flat leaf parsley, finely chopped, 3 cherry tomatoes, finely chopped, Sea salt flakes and black pepper.
