Jane’s cherry and custard tart recipe on Lorraine

Jane Beedle served up a cherry and fig custard tart on today’s episode of Lorraine.

The ingredients for the sweet shortcrust pastry: 250g plain flour, 150g salted butter, cubed, Pinch of salt, 70g icing sugar, 1 large egg and 2 large egg yolks (one for sealing pastry).

For the filling: 200g fresh cherries, 5 fresh figs or apricots (quarter the figs or halve and stone apricots), 8 large eggs, 400ml double cream, 100g caster sugar, 2 tsp almond extract and 50g slivered pistachios (buy ready prepared or peel and slice unsalted ones).
