Darren McGrady served up a banana flan with apricot that is a favourite dessert of Prince William and Prince Harry on Royal Recipes with Michael Buerk.
The ingredients for the pastry: 6 ounces sugar, 14 ounces butter, 1 egg, 1 tsp. vanilla paste and 1 pound all-purpose flour.
For the pastry cream filling: 1 1/2 cups milk, 1/2 cup heavy cream, 5 egg yolks, 1 egg, 3/4 cup granulated sugar, 2 tsp. vanilla paste or vanilla extract, 1/4 cup cornstarch, Pinch of salt and 1 Tbsp. unsalted butter , softened.
For the Topping: 4 ripe bananas and 1/2 cup apricot jelly.
