Anna Haugh venison with juniper sauce recipe

Anna Haugh served up venison with juniper sauce using the same recipe that was used to create the dish at the Queens 80th birthday party.

The venison is cooked with thyme, crushed garlic, pepper and butter and served with green vegetables and a juniper sauce made with juniper berries, shallots, garlic, thyme, chicken stock, beef stock, cream and Madeira wine.
