A salmon pie with spinach and hollandaise sauce on The Hairy Bikers Comfort Food show is a real treat for fish lovers everywhere.

The ingredients for the hollandaise are: 50ml white wine vinegar, few peppercorns, 1 bay leaf, 1 shallot, finely diced, 1 blade mace, 250g butter, diced, 3 free-range egg yolks, pinch salt, squeeze lemon juice (optional), pinch sugar (optional), 1 lemon, zest only (optional) and finely chopped tarragon (optional).

For the salmon pie: 500g salmon fillet, 450–500g bag baby leaf spinach, thoroughly washed, 4-5 tbsp hollandaise sauce, 375–500g pre-rolled puff pastry, 1 free-range egg, lightly beaten and salt and freshly ground black pepper.
