Tom Kerridge pork kebabs with cauliflower couscous recipe on This Morning

Tom Kerridge served up delicious pork kebabs with cauliflower couscous on This Morning. The recipe is taken from his new book titled: Tom Kerridge’s Dopamine Diet: My low-carb, stay-happy way to lose weight, available from Amazon.

The ingredients are: 500g good-quality minced pork, 1 red onion, diced, 3 garlic cloves, grated, 3 tbsp fennel seeds, toasted in a dry frying pan until fragrant then lightly crushed with a pestle and mortar, finely grated zest of 1 orange, 2 tsp salt and Vegetable oil, for cooking.

For the cauliflower couscous: 1 cauliflower (about 600g), broken into florets,
1 tsp ground cumin, 1 tsp cracked black pepper, ½ tsp chilli powder, 2 tbsp extra virgin olive oil, A bunch of coriander (about 25g), finely chopped, tender stems and all, sea salt and freshly ground black pepper.

For the seasoned yoghurt: 3 tbsp Greek yoghurt, 1 tbsp tahini, Juice of ½ lemon and 1 tbsp extra virgin olive oil.
