The Hairy Bikers Morecambe bay potted shrimp risotto recipe

Si and Dave served up a tasty Morecambe bay potted shrimp risotto with a fennel and orange salad on The Hairy Bikers Comfort Food show.

The ingredients are: 1 tbsp olive oil, 25g butter, 1 large onion, finely chopped, 2 garlic cloves, finely chopped, 1 large courgette, coarsely grated, 1 lemon, zest only, 300g risotto rice, 100ml white wine or vermouth, 1.2 litres chicken or vegetable stock, 150g potted shrimp (3 small pots), 50g parmesan cheese, extra grating of nutmeg (optional) and few basil leaves.
