Anna’s ragu alla bolognese recipe on The Cook Who Changed Our Lives with Nigella Lawson

Anna Del Conte served up a tasty Ragù alla bolognese dish on The Cook Who Changed Our Lives with Nigella Lawson.

The ingredients are: 60g butter, 2 tbsp extra virgin olive oil, 60g unsmoked pancetta, finely chopped, 1 small onion, very finely chopped, 1 carrot, very finely chopped, 1 celery stick, very finely chopped, 1 garlic clove, very finely chopped, 1 bay leaf, 400g lean chuck or braising beef, coarsely minced, 2 tbsp tomato puree, 150ml red wine, such as a Sangiovese or a Barbera, 2 pinches grated nutmeg, 150ml beef stock, 150ml whole milk, salt and freshly ground black pepper, tagliatelle, to serve.
