John Whaite lentil and roasted cauliflower tagine recipe on Lorraine

John Whaite served up a tasty lentil and roasted cauliflower tagine on today’s episode of Lorraine.

The ingredients are: Olive oil, 1 large red onion, finely chopped, 2 carrots, very finely diced, 2 garlic cloves, minced, 1tsp ground cumin, 1tsp ground coriander, 1tsp paprika (not smoked), 1tsp ground cinnamon, ½ tsp ground allspice, 1tbsp tomato puree, 3tbsp dried currants, 50ml sweet sherry, 500ml chicken stock, 2 x 400g cans lentils and Salt.

For the Roasted Cauliflower: 1 medium cauliflower, Olive oil and 1tsp paprika.

To garnish: 1 red onion, finely sliced and 3tbsp sherry wine vinegar.

To serve: Few sprigs fresh coriander,
Optional – Couscous mixed with fresh parsley and mint, lemon juice, olive oil and seasoning,
Few spoonfuls Greek yogurt, sprinkled with paprika.
