Ken Hom serves up a very quick and easy Chinese dish on his visit to china. His dish is a aubergines with mild green chilli peppers stir fry. This is how he make it:
Slice the chillies and aubergines into small pieces.
Get the wok smoking hot, then add ginger and garlic, followed by the peppers, aubergines and fry for a few moments stirring constantly.
Add stock and soy source and continue to stir.
Add soft noodles and fragrance chilli oil, stir for a couple of minutes, the serve.
