Simon King and Dave Myers served up tasty chicken and spinach empanadas with Maggie’s hot sauce, sherry, tomatoes and capers on The Hairy Bikers Go West.<\/p>\n

The ingredients for the pastry are: 250g plain flour, \u00bd tsp baking powder, pinch salt, 50ml olive oil and 50ml white wine or fino sherry.<\/p>\n

For the filling: 300g frozen whole-leaf spinach, defrosted and chopped, 1 tbsp olive oil, plus extra for brushing, 1 red onion, finely chopped, \u00bd green pepper, finely chopped, 2 garlic cloves, finely chopped, 1 large tomato, chopped, 250g cooked chicken, chopped into small pieces, 1 lemon, zest and juice only, 1 tsp ground allspice, \u00bd tsp cinnamon, handful flatleaf parsley, finely chopped, 3 large sprigs mint, leaves picked and finely chopped and 25g capers.<\/p>\n
