pickled gherkins mayonnaise on Marcus Wareing&#8217;s Tales from a Kitchen Garden.<\/p>\n<p>The ingredients for the meat patties are: 1 onion, finely chopped, 1 tbsp olive oil, 100g cooking chorizo, 300g pork mince, 2 tbsp tomato ketchup, 1 tbsp Worcestershire sauce, \u00bd tsp sweet smoked paprika, 2 tbsp coriander leaves, chopped, 2 free-range eggs, 6 water biscuits, finely crushed, \u00bd tsp table salt, salt and freshly ground black pepper.<\/p>\n<p>For the spiced mayonnaise: 6 tbsp mayonnaise, 1 red chilli, finely chopped, 2 tsp sriracha sauce (hot chilli sauce) and 8 pickled gherkins, finely chopped.<\/p>\n<p>To serve: 4 slices cheddar, 50g rocket or lettuce leaves and 4 burger buns.<\/p>\n<p><a
