The Dacquoise gets its name from a small town in South West France and is a very popular desert in the country.<\/p>\n<p>It has three layers of meringue with hazelnuts in the merging mixture, but the Hazelnuts really needs too be a precise bake because if it gets too dark the flavour will be bitter. If chopped to finely it will make the Meringue runny due to the excess oil that will be released. Coffee custard forms the base of the cr\u00e8me mousseline.<\/p>\n<p><strong>Baking Tips<\/strong><\/p>\n<p>The Meringue must be taken out of the oven and be aloud to cool before the Dacquoise is assembled.<\/p>\n<p>The coffee custard must be allowed to cool completely before adding the wiped cream.<\/p>\n<p>Sugar needs to be melted until it just caramelizes, before adding hazelnuts and lemon juice.<\/p>\n<p>Each praline cluster should have three caramelised nuts and each Dacquoise should have 12 clusters.<\/p>\n<p><strong>The Contestants attempt<\/strong><\/p>\n<p><a href=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2013\/10\/contestants-dacqoise.png\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2013\/10\/contestants-dacqoise.png\" alt=\"\" title=\"contestants dacqoise\" width=\"636\" height=\"350\" class=\"aligncenter size-full wp-image-10430\" srcset=\"https:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2013\/10\/contestants-dacqoise.png 636w, https:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2013\/10\/contestants-dacqoise-300x165.png 300w, https:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2013\/10\/contestants-dacqoise-200x110.png 200w, https:\/\/thetalentzone.co.uk\/musictv\/wp-content\/uploads\/2013\/10\/contestants-dacqoise-620x341.png 620w\" sizes=\"auto, (max-width: 636px) 100vw, 636px\" \/><\/a><\/p>\n<p>The contestants did not do badly at all with this technical challenge, producing very fine looking bakes.
