Ainsley Harriott served up a taste of the BBQ Mediterranean with his lemon and oregano chargrilled chicken with puy lentil, feta cheese and sundried tomato salad dish on This Morning.
The ingredients are: 4 x medium sized chicken breast, 1 a small bunch fresh oregano, finely chopped, Rind of one lemon, 1-2 tablespoons olive oil, Salt and freshly ground black pepper.
For the Feta, puy lentil and tomato salad: 1 x bag precooked puy lentil, 1 large red onion, chopped, 50g sundried tomatoes, 1 clove garlic, finely chopped, 100g feta cheese, 2-3 tablespoons flat leaf parsley, chopped, 1 x bag baby spinach, Handful baby cherry tomatoes, cut in half, 1-2 tablespoons balsamic vinegar (depending on your taste), 3-4 tablespoons extra virgin olive oil, Salt and freshly ground black pepper.
