Sally Bee served up a tasty seaside shrimp salad on today’s episode of Lorraine.
The ingredients are: For the prawns: 350g raw peeled tiger prawns, deveined, 1tbsp light olive oil, ½ red chilli, finely chopped, 2 cloves garlic, crushed and Ground black pepper, to season.
For the dressing: 1 tbsp low salt soy sauce, 1 tbsp lime juice, 1 tbsp light olive oil, 1 tbsp rice vinegar, 1 tbsp runny honey, ½ chilli, finely sliced and 3 spring onions, finely sliced.
For the salad: Few handfuls of salad leaves of your choice (crisp varieties work best), 1 medium sized watermelon, chopped into chunks, 50g sunflower seeds, 50g pine nuts, Handful fresh basil, leaves picked, Handful fresh mint, leaves picked and Equipment: Long wooden bamboo skewers, soaked in water.
