Simon Rimmer served up a tasty beef pepperpot casserole on today’s episode of Sunday Brunch.
The ingredients are: 1kg chuck steak in large cubes, 1 onion, 1 red pepper, 1 green pepper, 2 sticks celery, 3 red chillies, 2 aubergines, all roughly chopped, 1 tin chopped tomatoes, 100ml stock (chicken) and 225ml (Jamaican beer).
For the spice mix: heaped tsp each of white pepper, salt, thyme, all spice, garlic powder.
For the dumplings: 150g mashed spuds, 150g mashed sweet potato, 1 egg yolk, 1 tbsp fresh thyme, 1 tsp chilli flakes and 200g flour.
