Simon Rimmer served up tasty crispy bacon and potato salad on today’s episode of Sunday Brunch.
The ingredients are: 900g cooked new potatoes, halved, 50g lard, 350g smoked bacon (12mm dice), 1 very thinly sliced onion, 3 cloves sliced garlic, 75ml cider vinegar, 10g soft light brown sugar, 1 diced green pepper, 1 tbsp paprika, 1 tbsp chopped marjoram and 1 tbsp capers.
To serve: Chopped parsley, Sour cream and a handful jalapenos.
