Nadia Sawalha served up a tasty lemon and garlic roasted fish dish on today’s episode of Lorraine.
The ingredients are: 2 tbsp pine nuts or flaked almonds.
For the veg: 2 onions, thinly sliced in circles, 20 cherry tomatoes on the vine, 6 garlic cloves, thinly sliced, Salt and black pepper and 2 tbsp olive oil.
For the fish: A bunch of coriander, finely chopped, 1 tbsp olive oil, Zest and juice of a lemon, 4 x 100g cod loins, or any firm fish and 8 slices of lemon.
