Simon Rimmer served up a delicious coffee cake with Brigadeiro glaze on today’s episode of Sunday Brunch.
The ingredients are: 200g flour, 105g wholemeal flour, tsp baking powder, tsp bicarb, 45g instant coffee, mixed with a little boiling water to dissolve it, half tsp grd cardamom, pinch salt, 90g sugar, 210g soft dark brown sugar, 115g butter, 275g full fat yoghurt, 2 eggs and tsp pure vanilla.
For the Brigadeiro glaze: 1 tin 400g condensed milk, 50ml strong, coffee, 15g butter and 60g cream.
