Gennaro Contaldo served up a trio of delicious pasta sauces on This Morning. They include a traditional basil pesto sauce, Amalfi lemon, garlic and chilli pasta sauce and a Asparagus, pancetta and parmesan tagliatelle.
The ingredients for traditional basil pesto are: 1 clove of garlic peeled, 1 pinch of sea salt, 40g fresh basil leaves, 15g pine nuts, 50g Parmesan cheese and 80ml extra virgin oil.
For the Amalfi lemon, garlic and chilli pasta sauce are: Splash extra virgin olive oil, 1 clove of garlic, thinly sliced, 1 Red chilli, finely chopped, a generous knob of butter, Zest and juice of one lemon, Parmesan cheese, Flat leaf parsley, chopped and serve with Spaghetti.
For the asparagus, pancetta and parmesan tagliatelle: 12 thin slices higher-welfare pancetta, sliced into small strips, splash of extra virgin olive oil, 1 medium red onion, sliced, 1 red chilli, finely chopped, 150g asparagus, sliced, a handful flat leaf parsley, chopped, 40 g Parmesan, grated, sea salt and freshly ground black pepper and 500 g penne pasta.
