John Torode served up a tasty vegetable tagine for the weekend on This Morning.
The ingredients are: 2 carrots, pealed, cut in half lengthways and then cut in half the other way, 2 Large parsnips, pealed, cut in half lengthways and then cut in half the other way, 2 red onions, halved, 2 large potatoes, pealed and quartered, 3 leeks (white parts only) split, washed and cut in 6cm lengths, 1 tin of chickpeas, 30ml olive oil, 400ml water, 12 dried prunes, dates or figs, 2 preserved lemons rind off and slice into thin strips (optional) to serve, Small jar of harissa, to serve, 2 sprigs of mint, leaves picked and chopped, to serve.
For the chermoula: 1 tbsp ground cumin, 1 tbsp ground paprika, 1 tbsp ground turmeric, 1tsp hot chilli powder, 2 large red onions, roughly chopped, 3 garlic cloves, 3.5cm piece of fresh root ginger, pealed and roughly chopped, 200ml olive oil, 200ml lemon juice (the juice of about 3 lemons), 1 generous tbsp honey, a large handful of flat leaf parsley and a large handful of coriander.
For the couscous: 30g couscous, 100g butter, cut in to cubes, a small handful of sultanas, salt and freshly ground black pepper.
