James Martin made a delicious English apricot and almond frangipane filled tart on James Martin: Home Comforts.
James says: “This frangipane filled tart is an easy teatime treat that combines buttery pastry, sweet almonds and summery apricots.”
The ingredients are: 375g ready-made sweet shortcrust pastry, 200g butter, softened, plus extra for greasing, 200g caster sugar, 3 large free-range eggs, 200g plain flour, plus extra for dusting, 125g/4½oz ground almonds, ½ tsp baking powder, 150g apricot jam, warmed until melted and 8 fresh apricots, stones removed, cut into quarters.
