James Martin served up delicious St Emilion macarons with chocolate mousse on James Martin: Home Comforts.
James says: “This decadent and impressive dessert combines wine and chocolate for a grown-up take on mousse.”
The ingredients for the macarons: 100g icing sugar, 100g ground almonds, 100g caster sugar and 2 free-range egg whites.
For the chocolate mousse: 150g good-quality plain chocolate (minimum 70% cocoa solids), broken into pieces, 40g butter, melted, 4 free-range eggs, separated, 50g caster sugar and 150ml good-quality red wine, ideally St Emilion or Merlot.
