James Martin served up tasty Spanish chicken and Serrano ham croquetas with padrón peppers on James Martin: Home Comforts.
James says: “Creamy croquetas are popular all over Spain and are perfect for any occasion, from party nibbles to a quick snack.”
The ingredients are: 75g butter, 150g plain flour, 450ml/16fl oz milk, 75g serrano ham, roughly chopped, 75g cooked chicken, chopped, 1 small bunch fresh parsley, leaves roughly chopped, 25g flaked toasted almonds, 2 free-range eggs, 75g fresh breadcrumbs, vegetable oil, for deep frying, 4 tbsp olive oil, 200g padrón peppers (available from Spanish delicatessens), ½ tsp sea salt flakes and salt and freshly ground black pepper.
