Nadia Sawalha served up a tasty and healthy herby chicken kebabs with coleslaw and rice dish on today’s episode of Lorraine.
The ingredients are: 4 chicken (skinless boneless) breast, Juice of a lemon, 1 garlic clove, minced, 2 tbsp of oregano, 1 tsp of dried mint (optional), 1 tbsps of olive oil and Salt and pepper.
For the nutty rice: 200g of brown basmati rice, 500mls of boiling chicken stock and a handful of toasted cashews ,almonds or pine nuts.
For the slaw: 1/2 red cabbage, finely sliced, 1/2 white cabbage, finely sliced, 1 red pepper, thinly sliced, 1/2 red onion, thinly sliced and 2 tbsp freshly chopped flat leaf parsley.
For the dressing: 1tbsp white wine vinegar, 1 tbsp olive oil, 1 tbsp of Greek yoghurt and 1 tsp Dijon mustard.
