James Martin and Brian Turner served up the perfect chef’s rump steak with brioche leeks and potatoes on James Martin: Home Comforts.
The ingredients are: 1 medium potato, peeled and cut into 1cm cubes, 125g butter, 1 shallot, finely diced, 2 garlic cloves, finely diced, 500g leeks, washed, trimmed and sliced, 100ml white wine, 250ml double cream, 3 sprigs fresh thyme, leaves only, 3 slices brioche, cut into 1cm cubes, 50g Gruyère, finely grated, 4 x 250g good-quality rump steaks, 1 tbsp rapeseed oil and sea salt and freshly ground black pepper.
