James Martin Victoria sponge with mixed berries recipe on James Martin: Home Comforts

James Martin served up a delicious Victoria sponge with mixed berries and vanilla bean paste on James Martin: Home Comforts.

James says: “This fancy Victoria sponge is filled with fresh cream and syrup-coated berries for a special teatime treat.”

The ingredients are: 350g butter, plus extra for greasing, 350g caster sugar, 4 large free-range eggs, ½ tsp vanilla bean paste, 200g self-raising flour, plus extra for dusting, 375g ripe strawberries, hulled and cut into quarters, 300g fresh raspberries, 300g fresh blackberries, 150g fresh redcurrants, stems removed, 500ml double cream, very lightly whipped and 1-2 tsp icing sugar.
