James Martin served up a saviour French beef pithivier pasty using leftover vegetables for a Boxing Day lunch on Home Comforts at Christmas.
The ingredients are: 200g leftover cooked vegetables, roughly chopped, 1 tbsp chopped flatleaf parsley, sea salt and freshly ground black pepper, 50ml leftover beef gravy, plus extra to serve, 2 x 375g ready-made all-butter puff pastry, plain flour, for dusting, 2 tsp wholegrain mustard, 300g leftover cooked beef, cut into thin slices and 2 free-range egg yolks, beaten.
