James Martin cooked a tasty green herb sauce marinated spatchcocked roast chicken with chilli and an Asian style coleslaw using hispi cabbage for Boxing Day lunch on Home Comforts at Christmas.
James says: “This easy, zingy chicken recipe tastes delicious roasted in the oven or over the coals of a barbecue.”
The ingredients are:large bunch fresh coriander, roughly chopped, large bunch fresh mint, leaves only, large bunch fresh basil, leaves only, 6 garlic cloves, roughly chopped, 5cm piece fresh root ginger, peeled and roughly chopped, 4 green chillies, roughly chopped, 200g Greek-style yoghurt, 5 limes, 1 whole chicken, spatchcocked, 2 tbsp dark soy sauce, 2 tbsp fish sauce, 1 tbsp toasted sesame oil, 1 tbsp honey, 1 hispi cabbage, leaves only, finely sliced, 1 red onion, finely sliced and sea salt and freshly ground black pepper.
