James Martin make a delicious Charlotte royale cake for Boxing Day on Home Comforts at Christmas.
James says: “This fancy and pleasingly retro dessert can be made ahead of time – it’s great for a grown-up birthday party.”
The ingredients for the charlotte are: 1 pack raspberry jelly, 400g raspberries, 25g/1oz icing sugar, 150ml milk, 100g caster sugar, 3 free-range egg yolks, 6 sheets leaf gelatine, soaked in cold water for 5 minutes, drained and 300ml double cream.
For the Swiss roll: 8 free-range eggs, 150g caster sugar, plus extra for dusting, 1½ tsp vanilla bean paste and 150g plain flour and 150g raspberry jam.
To serve: 4-5 ripe strawberries, halved and 2-3 fresh mint sprigs.
