James Martin spare ribs and pork belly with barbecue sauce recipe on Home Comforts at Christmas

James Martin showed Michael Parkinson how to make American-style spare ribs and pork belly with a barbecue sauce for a pork fest on Home Comforts at Christmas.

James served his pork fest with a salad and a specially made pork pie for the former TV chat show host.

The ingredients are: 1kg pork belly, 1.5kg baby back pork ribs, 2 carrots, cut into chunks, 1 cinnamon stick, 2 fresh bay leaves, 2 onions, roughly chopped, 2 star anise and 1 tsp cloves.

For the barbecue sauce: 25g butter, 500g Bramley apples, peeled, cores removed, roughly chopped, 100g soft light brown sugar, 5 tbsp dark soy sauce, 200g chilli-tomato ketchup, 5 tbsp ready-made teriyaki sauce, 2 tbsp tamarind paste, 5 tbsp maple syrup and salt and freshly ground black pepper.

To serve: 4 spring onions, trimmed and sliced and dressed green salad.
